Peach Clafouti

Ingredients:
2 pounds peaches ripe, but firm – pitted and cut into ¼ inch slices
¾ cup all purpose flour
¾ cup sugar
2 eggs
8 oz. heavy cream
2 tsps vanilla extract
Confectioners’ sugar for dusting
Directions:
1. Pre-heat oven to 400°
2. Butter and flour a 2-quart baking dish and place fruit evenly across the bottom
3. In a medium bowl, combine the flour and sugar until well-mixed
4. In another bowl, whisk together the eggs, cream and vanilla. Make a well in the center of the flour mixture. In a thin stream, slowly whisk in the egg mixture until a smooth batter forms. Let this rest for 15 minutes
5. Pour the batter over the fruit and bake until the batter has just set and the top has turned a light golden color, about 25-30 minutes.
6. Serve warm or at room temperature. Dust with confectioners’ sugar.
